According to Descartes, why do humans make errors? Why are we imperfect? false judgments? Make mistakes?

Because we are human.

And to err is human,it is in our nature and is due to our carnal (Earthly) lusts and desires that override the inner being , or spiritual being that dwells within all of us.The inner being or spiritual being is that little voice in the back of our minds that we often hear but rarely listen to until it's too late,and then we wish we had listened to it.Some would call it your conscience.I would call it the voice of reason,and of wisdom.Some of us are more in tune with it than others,and those that are, generally possess more wisdom or common sense as a result of it.

It grieved God that He created man in the flesh because of his lusts,and desires that generally tend to rule over our flesh bodies.

It's impossible to know if you've made any mistakes. As you can only live your life once, you can't find out if the alternative to any particular action or judgement would've worked out any better. One thing leads to another. What you may consider to be an error might be a small part of a chain of events that turns out for the best.

To learn from our mistakes and make what we do better or do it better. To improve on what we do, say, seek, eat, and hear. There is always room for improvement. If there was so much perfection in life then things would be boring and blah with no zest.
